Honey Cashew Granola

Ingredients

1 cup Gourmet Cashews
1 cup old fashion oatmeal
1/2 cup brown sugar
1/4 cup honey
1 teaspoon nutmeg
1 teaspoon cinnamon
1 teaspoon vanilla
Salt

Directions

Preheat oven to 160c
Mix all ingredients together in a bowl
Spread parchment paper on a baking tray and pour the granola mix on to it
Bake for fifteen minutes, stir and return to oven for another fifteen minutes
Granola should be a deep golden brown
Will be soft while hot and become crunchier as it cools

Mint Yoghurt

Ingredients

2 cups plain yoghurt
4 tablespoons honey
1 bunch mint

Directions

Chop mint finely
Mix into yogurt with honey until well incorporated.
Top with granola and serve cold

Cashew Praline Paste

Ingredients

2 cups Gourmet Cashews
1 cup white sugar

Directions

Place sugar and cashews in a non stick pan and put over medium high heat
Prepare a baking tray lined with parchment paper or a silicone mat
Heat up sugar and Gourmet Cashews till sugar starts to melt and change color.
Once that starts to happen stir the mix until it turns a caramel color
Immediately turn it over to the lined baking tray
Once the mix cools it’ll harden. Break it up into shards and place in a food processor
Process until the Gourmet Cashews release their oils and the mix becomes similar to cashew butter.
You may have to give your processor a few breaks to prevent it from over heating.
You can also give the praline paste a mix a couple of times during the process.

Puff Pastry

Ingredients

1 pack puff pastry
1 egg
1/2 cup cinnamon sugar
1/4 cup melted butter

Directions

Preheat oven to 185c
Unroll pastry and lay flat.
Spread a thick layer of praline paste on the pastry leaving a one inch border all the way round
Roll up the pastry and cut into one inch circles
Place on a parchment lined baking sheet
Whisk egg with one tablespoon of cold water
Brush egg wash over tops and sides of each puff pastry roll
Sprinkle with a little cinnamon sugar
Bake for 20-25minutes till golden brown

Cashew Milk, Hot Chocolate, Spicy Nut Butter & Banana Bread

Cashew Nut Milk

Ingredients

1 cup cashews, Water

Directions

Place cashews in a bowl and add enough water to cover them by an inch. Set aside for 6 hours or overnight.

To make the milk, drain and rinse the soaked cashews.

Place in a blender with three and a half cups of cold water. Blend till completely smooth.

Pass the milk through a fine mesh sieve and store in a bottle.

The milk will last 3-4 days in the fridge.

Cashew Hot Chocolate

Ingredients

Cashew Nut Milk, 3 tbs Cocoa Powder, 3 tbs honey

Directions

Add 3 table spoons of cocoa powder to cashew milk

Add two tablespoons of honey.

Whisk thoroughly

Microwave for about 1 minute to desired temperature. Microwaving the cashew milk will make it thicker.

Tip : For additional creaminess you can melt dark chocolate chips into the hot chocolate

Banana Bread

Ingredients

1/2 cup chopped cashews

I Bunch Bananas

1 cup flour

1/2 cup oatmeal

1 large egg

1 teaspoon Vanilla

1 teaspoon baking soda

1/4 cup melted butter

Directions

Preheat oven to 160c

Mash bananas in a bowl till smooth

Add egg, butter and vanilla and combine thoroughly

Sieve in flour and baking soda, add oatmeal and chopped cashews

Combine until the flour just disappears. Do not over mix

Pour into an oiled loaf tin.

Bake for 45 minutes until a toothpick comes out clean

Spicy Nut Butter

Ingredients

2 cups cashews

1 teaspoon salt

1 teaspoon chili flakes

 

Directions

Place all ingredients into a food processor and blend for 10 minutes.

At first the nuts will become powdery and then release their oils.

Don’t be surprised to see the mix for a ball. Keep processing. Soon it’ll form a more liquid paste.

You may have to scrape down the sides and bottom of the bowl with a spatula once or twice during the process.

Give your food processor a rest every five minutes to prevent it from burning out or over heating.
